Can you convert old arcade sticks to play on the newer systems?

Hi all, I have a couple of the Street Fighter 15th Anniversary Arcade Sticks still kicking around the house, and was wondering if there is any way I could convert these sticks to be used on either the 360 or PS3 or both?
