Off axis tricks are those where you are kinda sideways or at an angle. Just hold your left analog stick to a corner while you do a grab or flip. Also you don't really need to do this as any sponcer will like any trick you do as long as it gets such and such points. So if you are having trouble getting off axis just do some killer jumps and flips and spins and grabs and earn those points and he/she should get amped.
no horizontal or vertical tricks...
those are the worst to get.
