Any word on when Shenmue III is coming out?

Not any time soon, Sega sayed there not working on Shenmue3.

Plus Sega didn't show any Shenmue3 at E3 so the soonest it could come out would be Fall of 2004.

Hell, i'm just finished the second installment, they hint there someone going faster than Ryo to catch the mirror. But he got luck when meeting with Shenhua. She got the dragon mirror in the cave where her dad working. Now, i think the story will pursuit in the Bailu Village. Also, Ren is interesting with the treasure, maybe he is on the race too.

Sadly, even if a third is made (is Suzuki waiting for the next generation of consoles?) the liklihood that it will a stateside release is slim.
