First let me say welcome to XBA. All of the games you listed are good in their own right, but without knowing your gaming preferences, it is difficult to make a recommendation. Personally, I would choose Morrowind. If you like wide-open RPG games, this one won't steer you wrong. If you have never tried an RPG, you just may become a convert. I enjoyed it right from the beginning, but if you don't, just give it a few hours to get into things, and I think you will be amazed at how this game can draw you in. The replayability-factor is off the charts.
Morrowind. Yet I haven't played Red Card Soccer so far...

UMM. MAYBE YOU SHOULD ADD MOTO GP TO THAT LIST, BECAUSE IT'S CERTAINTLY BETTER THAN ALL THE OTHER GAMES YOU LISTED.

Personally, I'd recommend Outlaw Golf.
I generally hate sports titles (not that golf's a sport) and think golf's about as interesting as watching paint dry. Despite this, Outlaw Golf is a fantastic game. It's hilarious. It offers hundreds of hours of playtime. It's great single player and multi-player.
Amped is also a great game but its multi-player suffers.
Morrowind? Yes, it's a wide open RPG but that's only because its developers never bothered to really tie your actions to a storyline. If you're frustrated with normal RPGs (in other words, you can't compete), give it a try. Otherwise, wait for something better.
Want a racing game? I'd recommend PGR. Great cars. Great tracks. Great game.

Outlaw Golf. It's fun and funny and will offer lots of replayability. The only bad thing though is that there are only 3 courses, but hopefully they will release an addon disk with new courses and players and stuff.

I normally wouldn't consider 4 months a long time, but in this case, he is asking which he should get. There is this game, which will be out in 4 months, compared to everything else which is out right now.
